Nestled in Mahekal Beach Resort, Fuego offers oceanfront dining in a relaxed, laid-back atmosphere. A spacious, open kitchen allows guests to watch Executive Chef Crescenciano Nerey and his staff as they prepare your meal over the open flames of a wood-fired oven grill.
Its “farm to fork” menu is an eclectic mix of flavors from Mexico, Argentina, New Zealand, Spain, Italy, and the United States. At Fuego, you can taste the world without a passport. Savor the Argentinian-inspired pizza with marinated flank steak, watercress, and parmesan; a New Zealand Rack of Lamb marinated with thyme, horseradish, and Dijon mustard sauce; or try Mayan Octopus grilled with habanero and sour orange, cactus, and served with rice.
“I love working here because it’s a chance to be playful with the menu while using the freshest ingredients,” said Chef Nerey, who worked in other resorts in the Riviera Maya before coming to Fuego.
Chef Nerey really shines when it comes to preparing seafood because of its availability and freshness. A local fisherman brings in-season lobster, octopus, grouper, and sea bass early in the afternoon, which later become individual dishes like Caribbean Grouper and Blue Fin Tuna that guests have come to enjoy.
Weekend nights are reserved for lobster on Friday and Seafood on Saturday. These are excellent opportunities, for example, to enjoy succulent, whole lobster with grilled vegetables and a creamy, fluffy potato souffle or Cuban Jumbo Shrimp prepared in a citrus, garlic marinade and served with vegetables and mushroom polenta. We like the Chilean Sea Bass which is served with a ginormous portobello mushroom, sweet corn, and bacon.
For vegetarians, Fuego serves a homemade pappardelle pasta with roasted vegetables in a spicy, tomato sauce, pizza topped with artichokes, eggplant, and baby spinach, and a grilled panela cheese appetizer with fresh herbs, Mexican-style bread, and a molcajete sauce.
The Fuego Salad featuring flame-charred romaine lettuce, blue cheese, bacon, and red wine vinaigrette is a house favorite.
Prepared with your choice of ground beef, spinach, and mushrooms, or fresh fish, the Argentinian empanadas had us licking our fingers in celebration. The secret to the empanadas is the crust, which achieved the feat of being flaky yet moist.
Dessert selections include Cajeta Mille Feuilles Cake, a Mexican take on the classic French pastry served with red berries and Fruit Coconut Soup. We recommend the Chocolate Volcano Cake because the cinnamon ice cream counterbalances the sweetness of the chocolate and blends well with the other Yucatecan flavors on the menu.
A wide array of cocktails, coffee, tea, and digestives are also available to top off your dinner. We enjoyed the Mayan Coffee, which comprises orange liquor, cinnamon, and Xtabentun, a traditional Yucatecan liquor made from anise seed, fermented honey, and rum.
