Secret Ingredient That Makes the Best Tacos Ever

Let me just state first, I don’t think I have ever had a bad taco. No matter where I travel in Mexico, the tacos are exceptional. I have eaten tacos on the side of the highway, in fancy-pancy restaurants, in cocinas economicas, and from food carts. Each taco is unique, and I have never met a bad taco on my travels through Mexico.

What I was in search of was a unique flavor that made my tacos, well, unique. My grilled shrimp, cochinita pibil, grilled chicken, and arrechera tacos were always good. My homemade salsas made from scratch using various dried chilis, fresh red or green tomatoes, onion and coriander, always a hit. I dug and dug and dug around until I found the secret.

So here is the secret. Avocado leaves. Yup, I added avocado leaves to the cooking process, removing the leaf before I served. The avocado leaf is used similar to a bay leaf, but the flavor is so very, very different. Who would have thunk?

I can’t describe the flavor the avocado leaf adds to the taco. It has to be tried first hand to really savor the difference this one ingredient makes. All I am going to say is that I am told again and again that the tacos are better. Something about the flavor when I use an avocado leaf is unique, special and really really good.

So there you have it. Find leaves at your local market or even perhaps in your backyard. You just need a few. Slip this little piece of heaven into your taco mixture whether it be meat, chicken, seafood or a vegetarian filling.
